I'm a real oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of them yet? (? You'll find all of my oatmeal cookie recipes directly there!) They're a few of the most popular recipes on my website cause they taste really sweet and comfy, just like traditional"indulgent" oatmeal cookie recipes, but they include no refined sugar or bread!
That means you are going to start with whole wheat bread (or gluten-free, if you would like ) and immediate oats (like these... or those for a gluten-free edition!) . Immediate oats are thinner and smaller than conventional rolled oats, and you are able to locate them in canisters right alongside those traditional oats at the grocery shop.
I probably seem like a broken record by now... But cause I ? you and want your cookies to turn out absolutely plump and soft, I'm reminding you again... Quantify your flour and oats properly, with this method or a kitchen scale! (? That's the one I have and enjoy. Too much of either side will make your cookies taste cakey or dry, as opposed to chewy. Watch these bananas? And all of those brown stains? If it comes to baking with bananas, brown = beautiful! I ? additional speckly bananas because they've a lot bright, bold taste --and also additional natural sweetness! That is the minimum amount of brown that I recommend. More is better!
The remaining part of the cookie dough's sweetness comes from a different organic ingredient... Pure maple syrup (such as this!) . You would like the kind that comes straight from pine trees, which is usually sold in thin glass jars or squat, round plastic jugs. Skip the pancake sugar and sugar!

The raisins add much more natural sweetness! The recently purchased, additional plump, perfectly soft ones are perfect... But if you have older, somewhat dried out carbohydrates (hmm... it seems absurd to explain dried fruit as dried out! ) , that's okay!
Just add them to a microwave-safe bowl, and put water on top till they're fully coated. Seal plastic wrap over the surface, and then microwave the bowl on high for 1 minute. If you allow the peppers sit while mixing together the cookie dough, this little trick hydrates them so they're exceptionally juicy--and that makes a significant difference in these cookies as soon as they're baked!

Yields: 15 biscuits
These oatmeal cookies are tender, chewy, and full of banana flavor! The recognizable cozy spices and plump raisins make these even more irresistible. They will keep for at least one week if stored in an airtight container in the fridge --should they last that long!
1 cup (100g) instant oats (fermented if needed and quantified like this)
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like this)
1 1/2 teaspoon baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
2 tbsp (28g) unsalted butter or olive oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/4 cup (40g) raisins
In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. Add in the flour mixture, stirring only until incorporated. Allow the cookie dough rest for 10 minutes.
Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.
Using a spoon and spatula, dip the cookie dough to 15 rounded scoops onto the prepared sheet, and flatten to the desired depth and width using Healthy Peanut Butter Oatmeal Cookies - Primavera Kitchen a spatula. Bake website here at 325°F for about 10-12 minutes.
Notes: It is extremely important to measure both the wheat and oats correctly utilizing this method or even a kitchen scale. (? That's the one I have and adore!) Too much of either can dry from the cookies and render them cakey instead of chewy.
Immediate oats are also known as quick-cooking or minute oats. They are available in large canisters, exactly like old-fashioned oats. They are not those in the tiny flavored loaf of bread. To make your own, include the same number of traditional yogurt into your food processor, and pulse 10-12 days or until the oats will be about 1/4 to ? of the original size.
For the gluten-free flour, I suggest the following mix: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, two tbsp (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (like this one!) Will also work, if quantified like this.
If your raisins are mature, drier, and not very plump or juicy... Add them into a microwave-safe bowl, and pour water on top till they're totally coated.
